French Coffee Mousse
Ingredients
3 tbsp strong coffee
2 tbsp Cognac
4 ounces semisweet chocolate chopped
2 tbsp sugar
1 cup whipping cream
2 tsp sugar
1/4 tsp vanilla extract
Method
Mix the coffee, brandy and chocolate in the top of a double boiler. Heat over simmering water until chocolate is melted. Stir in 2 tbsp of the sugar and stir until mixture is smooth and glossy. Cool completely. In a small, chilled bowl, beat the cream until thick. Beat in remaining sugar and vanilla extract. Fold in cooled chocolate mixture. Refrigerate until firm.
