Almond Honey Truffles
Ingredients:
1 cup almonds
1/4 cup flowers honey
1 cup bittersweet couverture chocolate
Method:
Grind the almonds until they are well ground in a food processor, add the honey and continue grinding until the texture is very smooth
Chill for an hour.
Scoop out the almond-honey cream, using a 1 inch truffle scoop, onto a baking sheet covered with wax paper. Chill for an hour.
Melt the couverture chocolate in the microwave or in a bain-marie(double boiler)
Pat each truffle with kitchen paper dry before dipping it in the melted chocolate. After dipping each truffle, place it back on the waxed paper.
Chill until the covering is hard.
